 | What should I know about shipping before I place my order? |
 | All perishable orders are guaranteed for arrival within 2-5 business days to correct and complete street addresses. Perishable orders are normally shipped Monday and Tuesday for arrival Wednesday through Friday. Please have your order delivered in time to allow for slow defrosting under refrigeration (12-48 hours). Non-perishable items will be shipped via our standard ground delivery service. For your convenience, standard shipping charges have been included in your merchandise total. We reserve the right to require air delivery of any of our perishable items during periods of very hot weather or where distance is a consideration. Additional charges will be applied to orders shipped to Alaska, Hawaii, Puerto Rico, and Canada. |

 | Yes, we can! Any order can be shipped via Federal Express second day air or next day air for an additional charge. For second day air service add $11.95 to your merchandise total. For next day air service, add $29.95. |
 | What is your holiday delivery policy? |
 | Please place your orders early to avoid the holiday rush! We will begin shipping holiday orders the week of December 2nd. We are happy to hold your order for shipment whenever you like; however, please note that additional air charges may be required on orders shipped after December 10th to certain destinations in order to guarantee Christmas delivery. |
 | How are items packed for shipping? |
 | Our perishable items are shipped frozen in reusable, insulated coolers to ensure they arrive in superb condition, and placed in attractive gift boxes for further protection. Complete cooking instructions will be included with each delivery. |
 | Can I send a special note or card with my gift order? |
 | Should you choose, we will be happy to enclose a handwritten greeting or your business card in your gift packages. Your special card or gift insert must be mailed to us in advance of shipping for inclusion in your order. |
 | How do I prepare my ham? |
 | Your ham is fully cured and smoked very slowly over hickory coals. However, we recommend the following to enhance the flavor: Remove the bag, and place ham on a rack in a roasting pan. Add 1/4" water to the bottom of the pan. Bake uncovered in a slow oven (300-325 degrees) for 10-12 minutes per pound. You may cover the pan loosely with aluminum foil for the last half hour of heating. Let sit, uncovered, for 30 minutes before carving. |
 | How long may I keep my ham in the freezer? |
 | Your ham will keep indefinitely in the freezer; however, we suggest using it within 6 months to ensure its' superb flavor. |
 | How much ham will I need? |
 | Our general rule of thumb is a half pound per person for a dinner serving. Plan on slightly less if you are serving buffet style. A half ham with bone in (7-8 1/2, pounds) will feed 7-10 people A whole ham with bone in (14-16 pounds) will feed 26-30 people A boneless ham (8-10 pounds, all meat) will feed 16-20 people |
 | Are your hams spiral sliced? |
 | No. We feel that pre-slicing a ham can take away from the flavor. For those who want ease of carving with all the great flavor, we recommend our boneless hams. |
 | Will my ham arrive frozen? |
 | Some thawing may occur in transit, but your ham will still be frozen and ready to go in the freezer when it arrives. If you are planning to use it right away, we suggest you order in plenty of time to allow for slow defrosting under refrigeration (24-48 hours). |
 | Why do you require overnight shipping on sausage? |
 | Our sausage is fresh - it is literally "made to order" - that's one reason it's so good! We want to make certain it arrives in perfect condition. Once you taste our sausage, you'll know it's worth the additional cost of delivery!  | How do I cook my sausage? |  | Your sausage is packaged in bulk, and each 1 1/2 pound package will make about six large patties. We suggest rolling them in the palm of your hand, and then patting them out on your grill or skillet with a spatula. You may want to use a weight as they cook if you like them thin and crispy like we do! | |
