Buckwheat Honey is a stout, complex honey that can be compared to sorghum or molasses. Hints of mossy earth and a not-so-sweet composition combine to develop a malty flavor with a pronounced, bright finish. It is a star drizzled over grapefruit or goat cheese, and makes an excellent glaze for salmon.

Pure, raw, unprocessed honey
Growing up on his family's farm in Northwestern Pennsylvania, Zeke Freeman, owner of Bee Raw Honey, gained an appreciation for homegrown fruits and vegetables and the rich heritage of artisanal food production. As an adult, he turned his passion for preparing food for family and friends into a full-time pursuit of the culinary arts.

In 1989, Freeman enrolled in the University of Montana's School of Food Management & Culinary Arts. Upon graduation, he relocated to France where he continued his studies of the culinary arts. He received accolades from his famous teachers, and worked in the best restaurants as a result. He was one of the good ones, and he knew it. But nothing put a grin on his face more than the one he got from sneaking away from the glamorous kitchens to find something natural to pair with something....well, natural!

Following two years in France, Freeman returned to the states and began working as a buyer for Dean & Deluca in New York City. In his pursuit of fine foods for Dean & Deluca, he discovered honey.

He loved the way it was a veritable catalyst for so many of the natural flavors he grew up experiencing on his family farm. Honey with cheeses. Honey with fruits. Honey with breads. Honey with meats. He'd studied fine wines and cuisine. Like all of those noble pursuits, honey had a parallel: It was a little known ingredient with culinary power.

He decided to return to the farm; to his earth. To the place where the simplest things create the most powerful, palatable experiences - and he created Bee Raw Honey.

Bee Raw Honeys are raw, unfiltered, varietal honeys sourced from American apiaries across the country. Each honey is harvested from the nectar of a single floral source. A honeybee will forage as far as three miles from its hive and Bee Raw's artisan beekeepers carefully place each hive in the center of one dense floral source. The bees gather only that nectar, and create a honey that is as unique as the flower it is derived from.

Bee Raw Honey is taken straight from the hive and placed in clear, simple jars. Most store-bought honeys are blended and processed to prevent crystallization, a natural state for honey. The processing also strips away natural flavors and color. All Bee Raw Honeys are pure, raw, and unprocessed.
