Caster Sugar is the name of a very fine sugar in Britain, so named because the grains are fine enough to fit through a sugar "caster" or sprinkler.

Especially formulated for baking, use caster sugar to sweeten cakes, cookies, meringues, custards and mousses. Because it dissolves quickly, it is perfect for sweetening iced tea and other cold drinks. It is the best sugar for sorbets, and is heavenly sprinkled over fresh fruit.
