Castronovo Chocolate Rare Cacao Collection, Amazonas 72%
Deep in the Amazon rainforest in the Orinoco River basin, there are remote areas believed to hold some of the original strains of cacao. It is here that this heirloom cacao is harvested from the jungle by two indigenous Piaroa communities. During the rainy season this area is inaccessible, so all cacao transport happens during the dry season. Cacao beans travel by water on a two-day canoe trip to the nearest road or by land on a treacherous day-long 4x4 expedition.
Denise Castronovo, the only U.S. female chocolate maker to have ever been honored at the International Chocolate Awards, crafts this award-winning chocolate with delicate flavors of blackberry, floral, malt and cashew and a robust chocolate backbone. A staff favorite in The Savory Pantry.
