More Than Gourmet's Classic Chicken Stock, a 40-time reduction of pure chicken stock, is the first classic French white chicken stock made to a professional chef's standards. Fond de Poulet Gold® requires more than 24 hours of reduction to achieve its deep, rich flavor and syrupy consistency. Use as the base for elegant soups and sauces calling for classic chicken stock.
Use one part Fond de Poulet Gold® to up to 40 parts hot water to make a classic chicken stock. Bring to a simmer and whisk until completely dissolved. If stronger stock is desired, add additional Fond de Poulet Gold®. For sauce preparations, use full strength or add up to 3 parts hot water and simmer for a classic Chicken Glace.
1.5 oz. makes 1/2 gallon of classic chicken stock.
