Sage is the velvety, gray-green leaf of an evergreen shrub native to the Mediterranean coast. It is cultivated in Turkey, Albania, and Dalmatia, but the term "Dalmatian" no longer refers to the place of origin. Instead it signifies the best grade of commercially grown sage.
