This exceptional Sel Gris comes from M. Gilles Hervy, an independent artisan paludier (craftsman salt harvester) in the Brittany region of France, near the town of Guérande. The salt marshes there have no peer in Europe for the quality of salt produced.
With the addition of aromatic bay, rosemary, basil and thyme, Hervy's Sel Gris with Herbes is a perfect salt for finishing salads and seasoning vine-ripened tomatoes, or mix with olive oil and use as a rub for meats prior to roasting or grilling.

In the long and narrow salt fields of Guérande, M. Hervy uses a float to "sweep" the crystallizing top of the evaporating sea water to harvest the precious Fleur de Sel. The majority of the harvest is sel gris, a hand harvested salt with a grey cast. However, on certain afternoons when weather conditions are just right, a lacy-white film forms on the top of the salt beds. This is the precious Fleur de Sel. It must be harvested on the same afternoon it is formed. For every 80 pounds of sel gris that is harvested, only 1 pound of Fleur de Sel is harvested.
