In Tunisia, M'hamsa translates into sundried wheat grains. Produced in the traditional Berber method, large grains are hand-rolled and preserved with olive oil and sun, imparting an earthy flavor unlike any other couscous. Production begins by mixing semolina with olive oil, water, and salt, which is then pushed through screens, ultimately creating the award-winning organic couscous that claimed SOFI Silver medals in 2008 and again in 2012 for "Outstanding Pasta, Rice or Grain."
