TIBVRTINI Olio Novello is the fresh, first new oil from the hand picked olives off the presses of the Fall olive harvest. Super 'profumissimo' as the Italians say, it is dense, cloudy, and so full of flavor, it is the yearly Italian ritual to savor this extraordinary seasonal delicacy.

The 2017 Novello is thick and rich and wonderful - a small harvest, but very unique flavor. It was a year of suffering for the olives, as there was no rain until September. The olives survived and the oil is especially fragrant and full of taste because of the hardship!

Flown from the mill straight to The Savory Pantry, the novello oil maintains its distinct qualities until late January or February. After this, it becomes more like a mellowed and settled extra virgin olive oil. So, attempt to use this seasonal specialty now, and use it often! it's perfect for drizzling over roasted winter vegetables, bruschettas, and as a drizzled finish to soups.

The oil named TIBVRTINI springs from trees growing on the ancient land of Villa Adriana - the Villa of the Roman Emperor Hadrian located in Tivoli built between 115 and 135 A.D. The Villa is located in the small but exceptional olive growing region near Rome, in the region of Lazio. The trees are most likely descendents of the olive groves that grew there during the period of ancient Rome. The noble families of Lolli di Lusignano and Bulgarini own the groves which grow on top of the ruins of the buildings and gardens of this ancient site.

The olives that comprise TIBVRTINI Olive Oil are handpicked with a small orange rake, or Mannucia. Voted among the 7 best Olive Oils in the World by TASTE Magazine, Tibvrtini is a truly artisinal olive oil, organic and unfiltered.
