I actually hate anything with coconut in it, but I was surprised when I found I actually really like these cookies. I like them even better with lemon curd on top of them.

They began as a retail bakery in Winston-Salem, North Carolina, operating continuously since 1930 as Dewey's Bakery. In 1992, Salem Baking Company was created to focus on traditional baked products. The company was named after the Moravian settlement of Salem, which was established in 1766, and was the source of the recipe for their very first product- Moravian Cookies. Only the finest ingredients from around the world go into their distinctive baked goods.
