Gentile Orecchiette Napoletane
Orecchietta means "little ear" in Italian, as reflected in this pasta's unique shape. The selected semolina wheat used in this pasta is strictly of Italian origin and of the best quality, including the Senatore Capelli variety, renowned for cooking to al-dente. It also gives the pasta a golden color. Bronze cut pasta molds create a rough and porous texture much like homemade pasta, allowing the sauce to cling. The low temperature drying method preserves the distinct texture and aroma.
Serve orecchiette with meat ragu and tomato sauce for a traditional Naples meal.
