The inspiration for this stunning syrup comes from one of Italy's famous liqueurs - Nicino, a mixture of green walnuts, sugar and spices that are left to macerate in alcohol for 45 days. The result is an ethereal, dark black elixir, beloved by Italians as a digestif or after-dinner drink.
This Sciroppo di Noci Verdi, or Green Walnut Syrup, is made from sugar, macerated green walnuts and vanilla bean, reduced until it is as thick and rich as aged balsamic vinegar. Enjoy drizzled over ice cream, fresh fruit, panna cotta or pudding, or pair with pastries or other confections made with walnuts.
