Ingredients:

  • 1 1/2 pounds baby potatoes, cut in half
  • 2 Tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground pepper
  • 1/4 teaspoon Truffle & Salt
  • 2 teaspoons chopped parsley

Directions:

  • Preheat oven to 400 degrees.
  • Toss the potatoes with the olive oil, kosher salt, and pepper.
  • Spread the potatoes is a single layer on a baking sheet lined with parchment paper. Roast the potatoes for 20 minutes.
  • Transfer the potatoes to a serving dish and toss with the Truffle & Salt. Garnish with chopped parsley.
  • Serves 4.
