Two varieties of olives native to Tunisia—Sahli black and a small percentage of Meski green—are pitted and crushed to form the fine paste that is the base of this rich and intense spread. The paste is finished with olive oil, and can be used on crackers and whole grain breads, as an accompaniment on any hors d'oeuvre platter, as a sandwich spread, or with roasted chicken.
