A Sicilian spin on a classic recipe, pesto rosso captures all the sun-drenched flavors of southern Italy, even in mid-winter. This regional interpretation of the original basil version brought south by Ligurian sailors stopping in the province of Trapani combines sun-dried tomato, olive oil, almonds, basil and garlic. It's fabulous tossed with pasta or as a topping for pork, chicken and fish. For an elegant appetizer in very little time, spread atop a slice of toasted baguette and spear with a shrimp.
