He was the first to develop the recipe for Cantucci, the traditional almond biscotti we know and love. In 1904 the Pandolfini family inherited the bakery (and the award-winning secret recipe) and four generations later they continue to uphold the tradition. Fresh baked daily with simple ingredients, the dough is hand-shaped into loaves, and after baking sliced while still hot from the oven, giving the biscotti their distinctive appearance.
