M'Hamsa Hand-rolled Organic Couscous

The Mahjoub family farms the soil in the lush Mejerda Valley of Tunisia, located on the southern shores of the Mediterranean. Their handcrafted production takes place here, under the Les Moulins Mahjoub label. In Tunisia, M'hamsa translates into sun-dried wheat grains. Produced using the traditional Berber method, large grains are hand-rolled and preserved with olive oil and sun, imparting a unique, earthy flavor. Production begins by mixing semolina with olive oil, water, and salt, which is then pushed through screens, ultimately creating the award-winning organic couscous that has twice claimed international SOFI Silver medals for "Outstanding Pasta, Rice or Grain."
