MEET THE MAKER

In Tunisia’s fertile Mejerda Valley, the Les Moulins Mahjoub family has cultivated the same land since the 18th century, preserving a farming tradition rooted in stewardship, biodiversity, and patience. For four generations, the Mahjoubs have practiced regenerative agriculture long before it became a movement—treating the farm as a complete ecosystem where nothing is wasted and everything gives back to the soil.

The culinary traditions of Les Moulins Mahjoub are shaped by a few simple elements: the sun’s warmth, water, sea salt, and above all, time. Tomatoes slowly dry beneath the Tunisian sun. Olives and preserved lemons spend months developing flavor naturally. Nothing is rushed, and that patience is reflected in every jar, bottle, and preserve the family produces.

For generations, the Mahjoubs farmed and prepared traditional foods primarily for their local community. In the early 1990s, brothers Abdelwaheb, Majid, and Raouf Mahjoub officially established the Les Moulins Mahjoub name and became among the first Tunisian producers to export their products internationally under their own label—introducing authentic Tunisian pantry staples to kitchens around the world.

Today, the company remains entirely family operated, with the next generation continuing the work alongside their siblings, children, and extended family. Universally respected for their dedication to traditional artisanal methods, the Mahjoubs continue to preserve centuries-old farming and food preservation techniques that prioritize flavor, quality, and respect for the land above all else.
