Gilda Doganiero, a former pastry chef at the Four Seasons, believes in tradition. She adheres to centuries-old methods in the creation of her delectable biscotti. Made from the most wholesome ingredients, including eggs from her own backyard flock of hens, Gilda's small batch production ensures the finest, freshest, most authentic biscotti possible. Hand cut and hand packaged, the light and pleasingly crisp cookies are perfectly paired with coffee, espresso, milk, hot chocolate, tea, and best of all, wine!

Our selection of unique flavors includes Chocolate Espresso, Vanilla Bean, Cherry Pistachio and Dad's Midnight Stash, an assortment of biscotti ends for late night nibbling!

Unbleached pastry flour, granulated sugar, whole eggs, baking powder, salt, vanilla extract.

Chocolate Espresso Biscotti also includes cocoa powder, bittersweet chocolate chips, espresso.
Cherry Pistachio Biscotti also includes dried cherries and pistachios.
Vanilla Bean Biscotti also includes bourbon vanilla bean paste.

Gilda Ann Doganiero, a Culinary Institute of America alum, left her job as pastry chef at the Four Seasons Hotel in 1996 to form Gilda's Biscotti, a company dedicated to providing Philadelphia area coffee shops with authentic, artisan style biscotti. Having baked her first batch in exchange for free espresso from Philadelphia's La Colombe, Doganiero knew that the biscotti available in the finest coffee shops was an Americanized version of the real thing - and a far cry from traditional Italian biscotti.

Authentic biscotti, says Doganiero, is crispy. It is baked more than once because it is supposed to be hard for dipping in coffee and tea. The Italians dip it in wine.

Gilda's Biscotti is dedicated to the preservation of traditional Italian methods when it comes to making her biscotti. She uses only wholesome ingredients, including eggs from her own backyard flock of hens. The dough is formed in to logs and placed in the oven until it is almost finished baking, and then cut by hand into the classic half-oval shape. The biscotti are then baked again, giving them the dry crunch of authentic Italian biscotti. This small batch production ensures the finest, freshest, biscotti possible.

The flavors are traditional as well. You might find a dried fruit or citrus peel or nuts that would come from regional areas of the Mediterranean, including almonds, pistachios, or hazelnuts. And Dad's Midnight Stash is a combination of flavors, perfect for late-night nibbling. And, in a bow to tradition once again, Gilda has featured her father on the label!
