In Tunisia, M'hamsa translates into sun-dried wheat grains. Produced using the traditional Berber method, large grains are hand-rolled and preserved with olive oil and sun, imparting a unique, earthy flavor. Production begins by mixing semolina with olive oil, water, and salt, which is then pushed through screens, ultimately creating the award-winning organic couscous that has twice claimed international SOFI Silver medals for "Outstanding Pasta, Rice or Grain."
