Our Favorite Champagne Vinaigrette
When the vinegar is this good, the key is to keep the dressing simple.
- 1 teaspoon Dijon mustard
- 2 medium garlic cloves, minced
- 4 tablespoon Champagne vinegar
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 cup olive oil
- In a small bowl, whisk the mustard, garlic, vinegar, salt and pepper.
- Slowly drizzle in the oil and whisk until the dressing emulsifies.
- Toss with salad greens just before serving.
